Massaman is not a native Thai word. It is generally thought to refer to the Muslims, with earlier writers from the mid-19th century calling the dish "Mussulman curry"; “Mussalman” being an archaic form of the word Muslim. The flavours of the massaman curry paste come from spices that are not frequently used in other Thai curries. Cardamom, cinnamon, cloves, star anise, cumin, bay leaves, nutmeg and mace would, in the 17th century, have been brought to Thailand from South Asia by foreigners, a trade originally dominated by Muslim traders from the Middle East, Indian subcontinent. Over time however, a combination with local produce such as dried chilli peppers, lemongrass, galangal, white pepper, shallots and garlic were added to make the massaman curry paste. This paste is first fried with coconut cream, and only then are meat and vegetables are added.

Rendang is a spicy beef dish which originated from Indonesia, especially the ethnic group of Minangkabau people, and is now commonly served across the country. Rendang is traditionally prepared during festive occasions such as traditional ceremonies, wedding feasts and Hari Raya. Bunny chow, often referred to as a bunny, is a South African fast food dish consisting of a hollowed-out loaf of bread filled with curry. It originated in the Durban Indian community. The precise origins of the food are disputed, although its creation has been dated to the 1940s.
Stories of the origin of bunny chow date as far back as the migrant Indian workers arrival in South Africa. One account suggests that migrant workers from India who were brought to South Africa to work the sugar cane plantations of Kwazulu-Natal (Port Natal) required a way of carrying their lunches to the field, so, a hollowed-out loaf of bread was a convenient way to transport their vegetarian curries. Meat based fillings came later. The use of a loaf of bread can also be ascribed to the lack of the traditional roti bread, in the absence of which a loaf of bread would be acceptable as an accompaniment to curry.

Thai Red chicken curry is a popular Thai dish consisting of red curry paste cooked in coconut milk with diced chicken. The base for the Thai red curry is traditionally made and blended carefully to release the flavours. The red colouring is derived from dry red spur chillies. The main ingredients include (dried) red chili peppers, garlic, shallots, galangal, salt, kaffir lime leaves, coriander root, coriander seeds, cumin seeds, peppercorns and lemongrass. This dish normally has a soup-like consistency and is served in a bowl and eaten with steamed rice. Our versions don’t have shrimp to make sure Vegetarians aren't left out to try this wonderful delicious coconut dish.


What You'll Need - Diced Chicken, Brocolli (or other Veg), Coconut Milk
